1. Highly acidic
Tomatoes generally have a pH between 4.0 and 4.5, which is acidic. This means the inner material must be acid-resistant and not react with the sauce. Food-grade PE is standard, and some even add an EVOH layer for added barrier.
2. Susceptible to oxidation
Ketchup easily changes color and flavor when exposed to oxygen. Therefore, the structure generally requires a high-barrier layer—aluminum foil or aluminized film—to effectively block oxygen and moisture. Supplier data suggests that a good barrier structure can extend the shelf life to 12-18 months.
3. Viscous consistency requires good flowability. Tomato sauce isn't water; it's frustrating when it's difficult to pour or squeeze. The nozzle diameter can be made larger (e.g., 10mm) to allow the thick sauce to flow smoothly. For hot filling, there are also heat-resistant versions that can withstand 85-90℃.
4. May require high-temperature sterilization. Some tomato sauces need to be stored at room temperature and require sterilization in a retort. In this case, the bag must be able to withstand temperatures up to 121℃, requiring a specially designed structure.
